This French omelette recipe is a classic and versatile favorite. In cuisine, an omelette or omelet is a dish made from beaten eggs fried with butter or oil in a frying pan (without stirring as in scrambled egg). It is quite common for the omelette to be folded around a filling such as cheese, chives, vegetables, meat (often ham or bacon), or some combination of the above.

- 2 Eggs
- 2 tbsp Chopped Tomatoes
- 5 to 6 Mint Leaves
- 1 Finally chopped onion
- Pinch graded garlic
- 2 Green chilly chopped
- 1 tbsp Butter / Oil
- Step 1 Mix all the ingredients together, except oil / butter.
- Step 2 Make a medium consistency batter.
- Step 3 Heat a tava or a flat pan. Smear some oil/butter on the pan.
- Step 4 With a large spoon pour the batter on the pan and spread it lightly with the back of the spoon.
- Step 5 The technique is like the way we make pancakes, you can even rotate and tilt the pan. Add some oil/butter drops on the edges & top of the omelette.
- Step 6 Flip and cook the other side, cook french omelette till both sides are cooked.
- Step 7 Serve french omelette with brown bread or buns and some coriander chutney or tomato sauce.
Yet another favorite Punjabi recipe at home. Quick to prepare a simple Baingan Bharata recipe without the use of many masalas and spices. We simply love this recipe in its simplicity and taste.
I have learned this recipe when I was doing preparation for my M.sc Part 1 exams for that I have to go Patna and I don’t have such time to cook good food but as a food lover I always look for spicy food and baingan (brinjal) is one of the easiest vegetables to be cooked so, I tried Baingan ka Bharata with some pinch of herbs and garam masala.
While selecting the brinjal for this recipe be sure to choose one that is large elephant size with a shiny smooth surface as these are likely to have a lower number of seeds. All in all this scrumptious dish is worth all the time and mess it may create!
The Punjabi Baingan Bharta has many fans all over the world. Baingan (Brinjal) cooked directly over the flame till the skin is charred and can be peeled off combined with a fine blend of spices and some ghee makes up this brilliant creation.

- • 1 large Brinjal
- • 3 tablespoon Oil or ghee
- • 5 large Onions chopped
- • 3 medium Tomatoes chopped
- • Garlic finally chopped
- • Salt to taste
- • 1 tablespoon Red Chilli Powder
- • 2 tablespoon Coriander powder
- • 2 tablespoon Fresh Coriander leaves chopped
- • 1 tablespoon Garam masala powder
- Step 1 1. Roast the brinjal on a medium flame till well cooked and the skin has charred completely.
- Step 2 2. Cool, peel and mash. Heat the oil in a non-stick pan and sauté the onions till light golden brown.
- Step 3 3. Add the tomatoes, garlic, salt and chilli powder and sauté till the masala is cooked and the oil rises to the surface.
- Step 4 4. Add the mashed brinjal and mix well. Lower the heat and cook for 4 to 5 minutes.
- Step 5 5. Add the chopped coriander leaves, garam masala powder and mix well. Serve hot.
